So, week two. The week that life got in the way. I like to call it. So I’ll get the worst bit out of the way first. I had some milk in a cup of tea on Sunday morning. Fail. I was extremely hungover and I just needed tea. The main issue here is the fact that I just cannot find a suitable replacement for milk for tea. Sure, soya milk lattes are nice, but not in tea. So if anyone can assist with this I’d be grateful of the help.
Anyway, so yes. It’s done. I’m not going to cry about it, or pretend it didn’t happen. I’m just going to move on and focus on the next few weeks! I’m pretty amazed that I still have not craved cheese. Not once, before I began this Veganism experiment I genuinely thought I would struggle with the lack of cheese. But perhaps I don’t eat it as much as I thought.
The week involved another Vegan haul. I bought loads of vegetables and cooked every night. No takeaways, no junk.. and it felt nice. I think I’ve also realised how much I have missed cooking for myself too. When you live on your own and the kids want to eat differently to you most of the time, it is easy to get stuck in a rut with meals for ease, or clicking onto Just Eat!
To start week two I purchased some items from the new Quorn Vegan range. I couldn’t get hold of the fish style fingers which was disappointing but I managed the fillets, the hot and spicy burgers and also the pieces. I think these items will add a little more variety into my diet as last week I ate ALL the tofu! I have had the Quorn spicy burgers in pitta pockets with rocket and tomatoes, they’re pretty nice and the kids liked them too. For other dinners, we have used the griddle pan a fair bit this week again, lots of vegetables, stirfrys with nuts and we also tried the Aldi vegan vegetable burgers, which were okay, but perhaps need a little something to spruce them up, maybe some spicy sauce next time! We have also eaten a fair few falafel wraps again!
For lunches I have eaten out quite a bit this week, Wetherspoons have some good lunch options and their smashed avocado and tomato salsa bagel is a winner with chips/salad which includes a drink for less than £4.50! I have also tried the local street food Thai place near to my work and devoured their lovely red Thai curry and jasmine rice! Of course, there has been a few jacket potatoes here and there, but everyone loves a jacket potato don’t they?!
At the end of week two, I’ve noticed again I had more energy in the gym and I’m definitely sleeping better so these are really positive side effects. The headaches have stopped and I’m drinking far less tea and coffee and replacing them with glasses of water, I am (as mentioned earlier) massively missing tea with milk.. but I am hoping I can make it to the end without any further hiccups!
